Schnitzel Recipe With A Tang

Ingredients

  1. 12 chicken breasts
  2. 3 eggs
  3. 1 cup all-purpose flour
  4. Bread crumbs of choice
  5. 1 lemon
  6. 2 tsp dijon mustard
  7. Oil/ olive oil

Method

Depending on how thin your chicken breasts are this step is optional, however, the thinner the better. Place your chicken breasts in a zip-lock or between two layers of cling wrap. Then pulverize until thin, careful not to break the breasts but simply thin them and make them tender. Place your ingredients in different bowls, your 3 eggs beaten in one bowl, a bowl of flour, and lastly a flat plate with the breadcrumbs covering the plate. Add your mustard to your beaten eggs as well as 3 pinches of grated zest. taking each thin chicken piece lightly dab it in the flour, ensuring it is evenly and thoroughly coated, then dip in the egg mixture and lastly in the breadcrumbs. Ensure you get the breadcrumbs evenly coated and that they cover the entire piece. Heat your oil in a pan ensuring you are being generous as these need to be fried. Once your oil is sizzling carefully place your schnitzels in the pan. Be sure to stand back as the oil sprays and is hot. Every 2 minutes flip the schnitzel’s if they are not fully emerged in the oil- continue until golden brown (approximately 5 minutes). As you take the schnitzel’s out place them on paper towel or oil-absorbing paper. Season accordingly.

Serving Suggestion

To add a little more flavor you can add salt, pepper, and paprika to your breadcrumb mixture which will add a little more flavor to your schnitzel’s. Additionally, we highly suggest serving these with some fresh lemon to squeeze. Side options should include salad, mashed potatoes, or fries. Another option is green beans which we recommend sauteeing in fresh garlic and adding flaked almonds too. These sides will elevate your dish and have the ability to somewhat dress it up for any and every occasion. The schnitzels can be kept in the fridge for days and simply reheated, they will taste as fresh as before! Mayonnaise and ketchup are must-haves on the side, you can also add a little chili into your mayonnaise for an extra kick but this is not preferred with the tang and mustard already infused. It should be noted that you can swap the chicken for veal, pork or any thin meat or your choice.
