Ingredients:
3 cups frozen strawberries
1 1/2 cups coconut milk
2 teaspoons fresh lemon juice
1 teaspoon vanilla extract
1 tablespoon natural sweetener (like pure maple syrup, raw honey, or stevia)
Directions:
Grab a food processor and puree the strawberries. In a bowl, combine coconut milk, lemon juice, vanilla extract, and sweetener. Be sure to alternate between pouring a layer of strawberry puree, then a thinner layer of coconut mix into popsicle molds. Do this until both are used up. Fishin by inserting the popsicle sticks and freeze for at least four hours (six is best though). Enjoy!
